  • 8 oz cream cheese (full-fat)
  • 1 cup powdered sugar
  • 1 cup sour cream (full-fat)
  • 1 tsp vanilla extract
  • Gel food coloring
  • Whipped cream (for serving, optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Roll out the pie crust and fit it into a 9-inch pie dish, crimping the edges.
  2. Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes until lightly golden. Let cool completely.
  3. In a bowl, beat cream cheese and powdered sugar until smooth. Blend in sour cream and vanilla extract.
  4. Divide the mixture into bowls and add gel food coloring to each, mixing until vibrant.
  5. Spoon dollops of each colored filling into the cooled crust, alternating colors, then gently swirl with a knife.
