Ingredients

  • 3 boneless chicken breasts (1.5 pounds)
  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 2 cups fresh lettuce (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (thinly sliced)
  • 4 whole wheat wraps
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper. Bake for 25-30 minutes until cooked through.
  2. Allow the chicken to cool slightly, then shred it using two forks.
  3. In a large bowl, mix mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper until smooth.
  4. Add shredded chicken, chopped lettuce, cherry tomatoes, and cucumber to the dressing mixture; mix well.
  5. Place generous portions of the mixture onto each wrap and roll tightly. Slice in half to serve.
