  • 2 tbsp chipotle sauce
  • 2 tbsp honey
  • 8 corn tortillas
  • 1 cup ripe pineapple, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 avocado (optional)

Instructions

  1. Whisk together chipotle sauce and honey in a bowl until smooth.
  2. Marinate salmon fillets in the mixture for at least 30 minutes.
  3. Preheat grill or oven to medium-high heat (375°F). Cook salmon for about 4-5 minutes per side until it flakes easily with a fork.
  4. In a separate bowl, combine pineapple, red onion, cilantro, and lime juice to make the salsa.
  5. Warm corn tortillas in a dry skillet until slightly charred.
  6. Flake cooked salmon onto each tortilla and top with pineapple salsa and avocado slices if desired.
