  • 1 cup fresh basil leaves
  • 4 garlic cloves, minced
  • 1 medium onion, diced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Place tomato halves on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until caramelized.
  2. In a pot, heat olive oil over medium heat. Sauté onions for about 5 minutes until translucent, then add garlic and sauté for an additional minute.
  3. Add roasted tomatoes and their juices into the pot along with vegetable broth. Simmer for about 10 minutes.
  4. Stir in fresh basil leaves and blend using an immersion blender until smooth. Adjust seasoning as needed.
