  • 34 pounds bone-in pork shoulder
  • 1 cup unfiltered apple cider
  • 2 large sweet onions, sliced
  • 4 garlic cloves, minced
  • 4 sprigs fresh thyme
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a Dutch oven, heat olive oil over medium-high heat. Season the pork shoulder with salt and pepper, then brown it on all sides until golden.
  3. Remove the pork from the pot and set aside. Add sliced onions and sauté until translucent (5-7 minutes).
  4. Stir in minced garlic and cook for an additional minute.
  5. Pour in the apple cider and chicken broth, scraping up any browned bits from the bottom.
  6. Return the pork shoulder to the pot along with fresh thyme sprigs. Cover tightly and braise in the oven for about 3 hours or until fork-tender.
