  • 2 cups fresh mushrooms (sliced)
  • 1 cup long-grain rice (uncooked)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups low-sodium beef broth
  • 1 cup sour cream (or Greek yogurt)
  • 2 cups shredded cheese (cheddar and mozzarella blend)
  • Salt, pepper, thyme, and parsley to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish.
  2. In a large skillet over medium heat, sauté chopped onions in oil until translucent, about 5 minutes. Add minced garlic and cook until fragrant.
  3. Increase heat slightly and add the ground beef; cook until browned, breaking it apart (7-10 minutes). Drain excess fat if needed.
  4. Stir in sliced mushrooms and cook until softened, about 5 minutes.
  5. Add uncooked rice and beef broth to the skillet; bring to a simmer. Cover and cook on low heat for about 20 minutes.
  6. Remove from heat; stir in sour cream and half of the shredded cheese until combined.
  7. Transfer to the greased baking dish. Top with remaining cheese and bake for 25-30 minutes until bubbly and golden brown.
