  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 15 oz canned tomato sauce
  • 4 cups low-sodium beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 tsp Italian seasoning
  • 1 cup ricotta cheese
  • 1 egg
  • ½ cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked.
  2. Add chopped onion and minced garlic; cook until onions are translucent.
  3. Stir in tomato sauce and beef broth; let simmer for 10 minutes.
  4. Add broken lasagna noodles and cook until tender, about 10 minutes.
  5. Season with Italian seasoning, salt, and pepper to taste.
  6. In a separate bowl, combine ricotta cheese, egg, and Parmesan; mix well.
  7. Serve soup in bowls topped with the ricotta mixture and shredded mozzarella.
