Ingredients

  • 1 cup green or brown lentils, rinsed
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 cups spinach or kale (added at the end)
  • Salt & pepper to taste

Instructions

  1. Heat 2 tbsp olive oil in a large pot over medium heat. Add onions, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in garlic, cumin, and smoked paprika; cook for an additional minute until fragrant.
  3. Add diced tomatoes, vegetable broth, and lentils. Bring to a boil while stirring gently.
  4. Reduce heat to low, cover the pot, and simmer for 30-35 minutes until lentils are tender.
  5. Add spinach or kale during the last few minutes of cooking and season with salt and pepper to taste.
  6. Serve hot with crusty bread or crackers.
