  • 1 cup green or brown lentils
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers (red or yellow), chopped
  • 2 tablespoons taco seasoning
  • 1 can (15 oz) diced tomatoes with juice
  • 4 cups low-sodium vegetable broth
  • 1 cup frozen corn
  • 1 can (15 oz) black beans, rinsed and drained
  • Juice of 1 lime

Instructions

  1. Chop the onion, garlic, and bell peppers.
  2. In the slow cooker, combine lentils, diced tomatoes (with juice), vegetable broth, corn, black beans, bell peppers, onions, garlic, and taco seasoning.
  3. Set the slow cooker on low heat and cook for 6 to 8 hours until lentils are tender.
  4. Stir in fresh lime juice just before serving.
