Ingredients
- 1 medium spaghetti squash (about 3 lbs)
- 1 cup heavy cream
- 1 cup shredded Gruyère cheese

Instructions
- Preheat the oven to 400°F (200°C). Halve the spaghetti squash lengthwise and remove the seeds. Brush the insides with olive oil and season with salt and pepper.
- Place cut-side down on a baking sheet lined with parchment paper and roast for about 40 minutes until fork-tender.
- While roasting, melt butter in a skillet over medium heat, add minced garlic, and sauté for 1-2 minutes until fragrant.
- In a bowl, mix heavy cream with shredded Gruyère and half of the Parmesan until smooth.
