  • 1 medium spaghetti squash (about 3 lbs)
  • 1 cup heavy cream
  • 1 cup shredded Gruyère cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Halve the spaghetti squash lengthwise and remove the seeds. Brush the insides with olive oil and season with salt and pepper.
  2. Place cut-side down on a baking sheet lined with parchment paper and roast for about 40 minutes until fork-tender.
  3. While roasting, melt butter in a skillet over medium heat, add minced garlic, and sauté for 1-2 minutes until fragrant.
  4. In a bowl, mix heavy cream with shredded Gruyère and half of the Parmesan until smooth.
  5. Scrape out the roasted squash into the mixture, fold gently to combine, then transfer to a greased baking dish. Top with remaining Parmesan.
  6. Bake at 375°F (190°C) for 20-25 minutes until bubbly and golden brown.
