  • 1 cup green or brown lentils
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups fresh spinach or kale
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Gather all ingredients.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent, then add garlic, carrots, and celery. Cook until softened.
  3. Stir in lentils, cumin, paprika, thyme, salt, and pepper; sauté for 2 minutes.
  4. Pour in vegetable broth and canned tomatoes (with juice). Bring to a boil and reduce heat to simmer for about 30 minutes until lentils are tender.
  5. Add spinach or kale and stir until wilted. Adjust seasoning as needed.
  6. Serve hot with your favorite toppings.
