- 9 lasagna noodles (no-boil recommended)
- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh spinach
- 2 cups Alfredo sauce (store-bought or homemade)
- 2 cups shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions until al dente; drain and lay flat on parchment paper.
- In a skillet, heat olive oil over medium heat. Sauté diced chicken until golden brown, about 6-8 minutes. Add garlic powder and Italian seasoning.
- Stir in fresh spinach until wilted, then mix in half of the mozzarella cheese.
- Spread Alfredo sauce on each noodle, place about 2 tablespoons of chicken filling at one end, and roll tightly.
- Place rolls seam-side down in a greased baking dish. Pour remaining Alfredo sauce on top and sprinkle with remaining mozzarella and Parmesan cheese.
- Bake uncovered for 25-30 minutes until bubbly and golden brown.
