  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh baby spinach
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper; sear each side for about 6 minutes until golden brown and cooked through. Remove from skillet and let rest.
  2. In the same skillet, add sliced mushrooms and minced garlic; sauté for about 5 minutes until mushrooms are golden.
  3. Add fresh spinach to the skillet; cook until wilted (2-3 minutes).
  4. Pour in chicken broth and heavy cream; simmer for about 5 minutes until slightly thickened.
  5. Slice the rested chicken and return it to the skillet along with grated Parmesan cheese; stir to combine.
  6. Serve over pasta or rice, garnished with extra Parmesan if desired.
