  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 1 cup fresh ricotta cheese
  • 12 oz spaghetti or fettuccine
  • 4 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 2 cups fresh spinach or kale
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping garlic and measuring out everything needed.
  2. In a large skillet over medium heat, add olive oil. Sauté seasoned chicken breasts for about 6-7 minutes per side until golden brown and cooked through. Remove and let rest.
