Ingredients

Scale
  • 1 lb Italian sausage
  • 4 medium Yukon Gold potatoes (about 2 lbs), diced
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the sausage until crispy, about 5 minutes. Remove and set aside.
  2. In the same pot, sauté onions and garlic until softened (3-4 minutes).
  3. Add diced potatoes and chicken broth; bring to a boil. Reduce heat and simmer for 15 minutes or until potatoes are fork-tender.
  4. Return the sausage to the pot along with heavy cream, paprika, thyme, salt, and pepper. Heat through for about 5 minutes.
  5. Serve hot, garnished with fresh herbs or cheese if desired.
