  • 34 boneless skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups frozen mixed vegetables
  • Dried thyme
  • Salt
  • Pepper

Instructions

  1. 1. Preheat the oven to 375°F (190°C).
  2. 2. Heat oil in a large skillet over medium-high heat. Sear chicken breasts for about 5 minutes on each side until golden brown. Remove from heat.
  3. 3. In the same skillet, sauté minced garlic and chopped onion until fragrant and translucent.
  4. 4. Stir in rice and chicken broth, scraping browned bits from the bottom.
  5. 5. Add heavy cream and frozen mixed vegetables; combine well.
  6. 6. Return seared chicken to the skillet, cover with foil, and bake for 25-30 minutes until everything is cooked through.
