- 2 cloves fresh garlic, minced
- 1 medium onion, finely chopped
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 cups frozen mixed vegetables
- Dried thyme
- Salt
- Pepper
Instructions
- 1. Preheat the oven to 375°F (190°C).
- 2. Heat oil in a large skillet over medium-high heat. Sear chicken breasts for about 5 minutes on each side until golden brown. Remove from heat.
- 3. In the same skillet, sauté minced garlic and chopped onion until fragrant and translucent.
- 4. Stir in rice and chicken broth, scraping browned bits from the bottom.
- 5. Add heavy cream and frozen mixed vegetables; combine well.
- 6. Return seared chicken to the skillet, cover with foil, and bake for 25-30 minutes until everything is cooked through.
