- 3–4 boneless skinless chicken breasts (about 1.5 lbs)
- 1 cup green chile sauce
- 2 cans (15 oz each) white or yellow hominy, drained
- 1 cup fresh cilantro, chopped (for garnish)
- Juice of 2 limes
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
Instructions
- Chop onion and mince garlic.
- In a skillet, sauté onions in oil until translucent; add garlic until fragrant.
- Transfer the sautéed mixture to the crockpot. Add chicken breasts, green chile sauce, hominy, spices, and chicken broth. Stir gently.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and return it to the pot.
- Serve hot topped with fresh cilantro, lime juice, and optional garnishes like avocado or radishes.
