Ingredients

  • 2 cups cooked jasmine rice (chilled)
  • 1 medium cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 red bell pepper (diced)
  • 3 green onions (chopped)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chilled jasmine rice until fluffy.
  2. Dice the cucumber, halve the cherry tomatoes, dice the red bell pepper, and chop the green onions.
  3. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until well combined.
  4. In a large bowl, gently mix the cooled rice with chopped vegetables.
  5. Drizzle the dressing over the salad and toss until evenly coated.
  6. Allow the salad to rest for about 10 minutes before serving to let flavors meld.
