Ingredients

  • 1 cup white vinegar
  • 1/2 cup water
  • 1 tbsp kosher salt
  • 1 tbsp sugar
  • 4 garlic cloves, smashed
  • 4 sprigs fresh dill
  • 1 tsp red pepper flakes (adjust to taste)

Instructions

  1. Clean jars thoroughly in hot soapy water.
  2. In a saucepan over medium heat, mix vinegar, water, salt, and sugar until dissolved.
  3. Pack fresh okra tightly into sterilized jars with smashed garlic and dill.
  4. Pour the hot brine over the okra, leaving half an inch of headspace. Seal jars.
  5. Let cool at room temperature before refrigerating for at least 24 hours.
