Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and sugar. Add eggs one at a time, mixing until smooth.
  3. Pour batter into the prepared pan and bake for 15 minutes until it springs back when touched.
  4. Let cool in the pan for 5 minutes, then flip onto a powdered sugar-dusted towel.
  5. In another bowl, whip heavy cream until soft peaks form; fold in peanut butter.
  6. Spread the filling over the cooled cake and roll it up using the towel as a guide.
  7. Wrap tightly in plastic wrap and refrigerate for at least an hour before slicing.
