  • 1 cup pearl barley, rinsed
  • 2 carrots, chopped
  • 2 celery stalks, diced

  • 6 cups low-sodium beef broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, add oil and sear the beef until browned on all sides.
