  • 2 large flour tortillas
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon or sausage, chopped
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: chop the bell peppers and onions.
  2. In a skillet, heat olive oil over medium heat. Sauté the onions and bell peppers until tender, about 5 minutes.
  3. Whisk the eggs with salt and pepper in a bowl. Pour into the skillet with the sautéed veggies and stir gently until fluffy.
