- 3–4 lbs brisket
- 1 head fresh green cabbage
- 4 medium carrots
- 3 Yukon Gold potatoes
- 2 tbsp pickling spice
- 4 cups low-sodium beef broth
- 2 bay leaves
- Fresh parsley for garnish
Instructions
- Rinse the brisket under cold water and pat dry. Season generously with salt and pepper.
- In a large pot, heat oil and sauté chopped onions until golden brown.
- Add enough water to cover the brisket, along with bay leaves and pickling spice. Bring to a boil, then reduce heat to low and simmer for about 2 hours.
- Add chopped carrots and potatoes; cook until tender (about 20 minutes).
- In the last 15 minutes, add cabbage wedges to the pot.
- Once cooked, slice the brisket against the grain and serve with vegetables, garnished with parsley.
