Corned Beef and Cabbage is a beloved Irish comfort dish that combines tender beef and vibrant veggies, perfect for family gatherings or festive celebrations.


Ingredients

  • 34 lbs brisket
  • 1 head fresh green cabbage
  • 4 medium carrots
  • 3 Yukon Gold potatoes
  • 2 tbsp pickling spice
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • Fresh parsley for garnish

Instructions

  1. Rinse the brisket under cold water and pat dry. Season generously with salt and pepper.
  2. In a large pot, heat oil and sauté chopped onions until golden brown.
  3. Add enough water to cover the brisket, along with bay leaves and pickling spice. Bring to a boil, then reduce heat to low and simmer for about 2 hours.
  4. Add chopped carrots and potatoes; cook until tender (about 20 minutes).
  5. In the last 15 minutes, add cabbage wedges to the pot.
  6. Once cooked, slice the brisket against the grain and serve with vegetables, garnished with parsley.
