Ingredients

  • 2 cups cooked corned beef, shredded
  • 2 medium Yukon Gold potatoes, diced
  • 1 medium sweet onion, chopped
  • 1 cup bell peppers, diced (any color)
  • 4 eggs
  • Salt and pepper to taste
  • Cooking oil (olive oil or butter)

Instructions

  1. Gather all ingredients; dice potatoes, chop onions and bell peppers.
  2. Heat oil in a large skillet over medium heat. Add diced potatoes and cook until golden brown and crispy, about 10-15 minutes, stirring occasionally.
  3. Add onions and bell peppers to the skillet; sauté until softened, approximately 5 minutes.
  4. Stir in the shredded corned beef until heated through, about 2 minutes.
  5. In a separate pan, fry eggs sunny-side-up or to your liking.
  6. Serve portions of corned beef hash topped with fried eggs. Season with additional salt and pepper if desired.
