Instructions
- Gather all ingredients; dice potatoes, chop onions and bell peppers.
- Heat oil in a large skillet over medium heat. Add diced potatoes and cook until golden brown and crispy, about 10-15 minutes, stirring occasionally.
- Add onions and bell peppers to the skillet; sauté until softened, approximately 5 minutes.
- Stir in the shredded corned beef until heated through, about 2 minutes.
- In a separate pan, fry eggs sunny-side-up or to your liking.
- Serve portions of corned beef hash topped with fried eggs. Season with additional salt and pepper if desired.
