  • 1 cup panko breadcrumbs
  • 1 packet ranch dressing mix
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • Salt & pepper to taste
  • Olive oil spray

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Set up a dredging station with three bowls: one for flour mixed with salt and pepper, one for beaten eggs, and one for panko breadcrumbs mixed with ranch seasoning and Parmesan.
  3. Cut chicken breasts into strips about 1-inch wide.
  4. Dip each strip into the flour, then into the egg, and finally coat with the panko mixture.
  5. Place on the baking sheet, spray lightly with olive oil, and bake for 20-25 minutes until golden brown and cooked through (internal temperature of 165°F/74°C).
