  • 1 lb large shrimp, peeled and deveined
  • 8 tostada shells
  • 2 ripe avocados (about 1 cup mashed)
  • 2 medium tomatoes, diced (about 1 cup)
  • 1/2 red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Marinate shrimp in a bowl with olive oil, garlic powder, cumin, salt, and pepper for at least 30 minutes.
  2. Mash avocados in another bowl; mix in lime juice, salt, and cilantro to make guacamole.
  3. Prepare pico de gallo by combining diced tomatoes, red onion, cilantro, and lime juice in a bowl; season with salt.
  4. Preheat grill or grill pan over medium-high heat; grill shrimp for about 3 minutes per side until pink and opaque.
  5. Assemble tostadas by spreading guacamole on each shell, topping with grilled shrimp and pico de gallo.
  6. Serve immediately with extra lime wedges if desired.
