Description

Ground Beef Enchiladas are a savory delight with soft tortillas wrapped around seasoned beef, topped with zesty sauce and melted cheese. Perfect for family gatherings or cozy dinners.


Ingredients

  • 1 lb lean ground beef
  • 8 corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • Fresh cilantro (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a pan over medium heat, cook ground beef until browned, breaking it apart as it cooks.
  3. Add chopped onions, cumin, and chili powder; sauté until the onions are translucent.
  4. Warm corn tortillas in another pan or microwave until soft.
  5. Spoon beef filling into each tortilla, roll tightly, and place seam-side down in a baking dish.
  6. Pour enchilada sauce over the tortillas and sprinkle cheese on top.
  7. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
