  • 1/2 cup Honey
  • 23 Chipotle Peppers in Adobo Sauce, finely chopped
  • 45 Garlic Cloves, minced
  • 1 large Onion, sliced
  • 1 cup Low-Sodium Beef Broth
  • 1 tsp Cumin Powder
  • Kosher Salt and Black Pepper to taste
  • Corn Tortillas
  • Optional Toppings: Avocado slices, cilantro, lime wedges

Instructions

  1. Chop onions and garlic to streamline your cooking process.
  2. In a hot skillet, sear the beef chuck roast on all sides for about 4-5 minutes until browned.
  3. Place the seared beef in a slow cooker. Mix honey, chipotles, garlic, onion, cumin, salt, and pepper in a bowl; pour this mixture over the beef.
  4. Add enough broth to partially cover the meat.
  5. Cook on low for 8 hours or high for 4 hours until tender.
  6. Shred the beef using two forks and mix it with the sauce.
