Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter (melted)
  • 3 large fresh lemons (juiced and zested)
  • 2 large eggs
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a bowl, mix flour, sugar, and melted butter until well combined. Press into the bottom of the prepared dish.
  3. Bake the crust for about 15 minutes or until lightly golden.
  4. In another bowl, whisk together lemon juice, lemon zest, remaining sugar, eggs, baking powder, and flour. Pour over the baked crust.
  5. Return to the oven and bake for an additional 20-25 minutes until set.
  6. Allow to cool completely before slicing.
