  • 6 flour tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 green bell pepper, chopped
  • 1 onion, finely chopped
  • 2 tbsp taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream (for garnish)
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish with cooking spray.
  2. In a skillet over medium heat, sauté onions and bell peppers until soft (about 5 minutes).
  3. Add ground beef and taco seasoning; cook until browned (7-10 minutes), breaking it apart as you go.
  4. Stir in the rinsed black beans until heated through.
  5. Layer in the baking dish: start with the beef mixture, followed by tortillas, and cheese; repeat layers until all ingredients are used, finishing with cheese on top.
  6. Cover with foil and bake for 25 minutes; uncover and bake for an additional 10 minutes until bubbly and golden.
  7. Allow to rest before slicing; serve warm with sour cream and fresh cilantro.
