Description

  • 1 lb fresh salmon fillets
  • 8 small corn tortillas
  • 2 cups shredded cabbage (mix of green and purple)
  • 1 ripe avocado, sliced
  • 1/2 cup sour cream
  • 2 tbsp fresh lime juice (plus extra for serving)
  • Salt and pepper to taste
  • 1 tsp chili powder or smoked paprika for seasoning (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Pat dry salmon fillets and season with salt, pepper, and optional spices.
  2. Place seasoned salmon on a lined baking sheet and bake for 15-20 minutes until flaky.
  3. While the salmon bakes, mix shredded cabbage with lime juice and a pinch of salt in a bowl.
  4. Warm tortillas in a dry skillet over medium heat for about 30 seconds on each side.
