  • 1 lb large shrimp, peeled and deveined
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp lime juice (freshly squeezed)
  • 1 jalapeño pepper, finely chopped (adjust for spice level)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Rinse shrimp under cold water and pat dry. Season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sauté shrimp until pink and opaque (about 2-3 minutes per side). Remove from heat.
  3. In a bowl, combine diced mango, red onion, cilantro, jalapeño, and lime juice; toss gently.
  4. Warm tortillas in a dry skillet for about 30 seconds on each side.
  5. Assemble tacos by placing sautéed shrimp on each tortilla and topping generously with mango salsa.
  6. Serve immediately with lime wedges.
