  • 1 pound lean ground turkey
  • 1 cup cooked rice (brown rice optional)

  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheese (mozzarella or cheddar)
  • salt, pepper, oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting off the tops and removing seeds.
  3. In a skillet over medium heat, sauté onions until translucent. Add garlic and ground turkey; cook until browned.
  4. Stir in cooked rice, diced tomatoes, salt, pepper, and spices; mix well.
  5. Fill each pepper generously with the turkey mixture and top with cheese.
  6. Place in a baking dish covered with foil and bake for about 25 minutes. Remove foil for the last five minutes to melt the cheese.
