- 4 large Russet potatoes
- 1 lb lean ground beef
- 2 tbsp taco seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 3 green onions, chopped
- 1 cup salsa
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes and poke several holes in each.
- Bake potatoes directly on the oven rack or a baking sheet for 45-60 minutes until tender.
- In a skillet over medium heat, brown the ground beef until fully cooked.
- Stir in taco seasoning and 1/4 cup of water; let simmer for about 5 minutes.
- Mix in black beans and half of the shredded cheese until well combined.
- Cut baked potatoes open lengthwise and fluff the insides. Generously fill with the beef mixture and top with remaining cheese. Return to the oven for another 5 minutes or until cheese melts.
- Top with sour cream, salsa, and green onions before serving.
