- 1 lb lean ground turkey or beef
- 2 tsp taco seasoning
- 1 can (15 oz) black beans, rinsed
- 1 cup fresh corn (or frozen, thawed)
- 1 cup shredded cheddar cheese
- ½ cup sour cream or Greek yogurt
- ¼ cup chopped cilantro
Instructions
- 1. Preheat oven to 400°F (200°C).
- 2. Wash and pierce sweet potatoes; roast on a baking sheet for 45-50 minutes until tender.
- 3. In a skillet, brown ground meat over medium heat for 5-7 minutes.
- 4. Add taco seasoning and a splash of water; simmer for 5 minutes.
- 5. Stir in rinsed black beans and corn; heat through.
- 6. Slice roasted sweet potatoes open and fluff the insides with a fork.
