  • 2 medium sweet potatoes (about 1 lb)
  • 1 lb lean ground turkey or beef
  • 2 tsp taco seasoning
  • 1 can (15 oz) black beans, rinsed
  • 1 cup fresh corn (or frozen, thawed)
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream or Greek yogurt
  • ¼ cup chopped cilantro

Instructions

  1. 1. Preheat oven to 400°F (200°C).
  2. 2. Wash and pierce sweet potatoes; roast on a baking sheet for 45-50 minutes until tender.
  3. 3. In a skillet, brown ground meat over medium heat for 5-7 minutes.
  4. 4. Add taco seasoning and a splash of water; simmer for 5 minutes.
  5. 5. Stir in rinsed black beans and corn; heat through.
  6. 6. Slice roasted sweet potatoes open and fluff the insides with a fork.
  7. 7. Spoon the taco mixture into each potato half, top with cheese, and return to the oven at 350°F (175°C) for an additional 10-15 minutes until cheese melts.
