  • 1 cup cherry tomatoes, halved
  • 8 oz burrata cheese
  • 3 tbsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash asparagus thoroughly, trim tough ends, and slice cherry tomatoes in half.
  2. Blanch asparagus in boiling salted water for 2-3 minutes until bright green. Transfer to ice water to stop cooking.
  3. In a small bowl, whisk olive oil and lemon juice; season with salt and pepper to taste.
  4. In a large bowl, combine blanched asparagus and halved tomatoes; drizzle dressing over the top and toss gently.
