  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup chopped asparagus (blanched)
  • 1 cup sweet peas (fresh or frozen)
  • 1/4 cup fresh herbs (basil or chives, finely chopped)
  • 1 cup cheese (goat cheese or Gruyère, crumbled or shredded)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a pie dish if using homemade crust.
  2. Roll out the chilled pie crust into the dish, trim excess dough, and prick with a fork.
  3. Blanch asparagus in boiling water for 2-3 minutes until bright green; transfer to ice water and drain.
  4. In a bowl, whisk together eggs and heavy cream until fluffy; stir in salt, pepper, and chopped herbs.
  5. Layer blanched asparagus, sweet peas, and cheese evenly in the prepared crust. Pour custard mixture on top until just covered.
  6. Bake for 35-40 minutes until golden brown on top and set in the center. Allow cooling slightly before slicing.
