Description

Banana Bread Bites are scrumptious, bite-sized treats bursting with the sweetness of ripe bananas and a hint of cinnamon. Perfect for breakfast, snacks, or dessert!


Ingredients

  • 3 ripe bananas
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 2 large eggs
  • ⅓ cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. Mash the ripe bananas in a bowl until smooth but slightly chunky.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Combine melted butter and sugar in a separate bowl; add eggs and vanilla until smooth.
  5. Gently fold dry ingredients into wet ingredients until just combined; add nuts or chocolate if desired.
  6. Spoon batter into muffin cups until three-quarters full.
  7. Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the pan for five minutes before transferring to a wire rack.
