- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1 tsp baking soda
- ¼ tsp salt
- 1 tsp cinnamon
- 2 large eggs
- ⅓ cup unsalted butter (melted)
- 1 tsp vanilla extract

Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin pan.
- Mash the ripe bananas in a bowl until smooth but slightly chunky.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon.
- Combine melted butter and sugar in a separate bowl; add eggs and vanilla until smooth.
- Gently fold dry ingredients into wet ingredients until just combined; add nuts or chocolate if desired.
- Spoon batter into muffin cups until three-quarters full.
- Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for five minutes before transferring to a wire rack.
