- 2 medium russet or Yukon gold potatoes
- 4 large eggs
- 1 cup sharp cheddar cheese, grated
- 1 small onion, chopped
- 1 bell pepper, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
Instructions
- Wash and peel (if necessary) the potatoes, then chop them into small cubes for even cooking.
- In a skillet over medium heat, add olive oil or butter. Sauté the chopped onions and bell peppers until softened, about 5 minutes.
- Stir in the cubed potatoes with salt and pepper. Cook until golden brown and tender, about 10–15 minutes.
- While the potatoes are cooking, whisk the eggs in a bowl until frothy. Pour the whisked eggs over the potato mixture when ready.
- Sprinkle grated cheddar cheese on top and gently stir until the eggs are just set but soft, around 3–4 minutes.
- Serve hot with extra cheese if desired.
