Ingredients

  • 2 medium russet or Yukon gold potatoes
  • 4 large eggs
  • 1 cup sharp cheddar cheese, grated
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter

Instructions

  1. Wash and peel (if necessary) the potatoes, then chop them into small cubes for even cooking.
  2. In a skillet over medium heat, add olive oil or butter. Sauté the chopped onions and bell peppers until softened, about 5 minutes.
  3. Stir in the cubed potatoes with salt and pepper. Cook until golden brown and tender, about 10–15 minutes.
  4. While the potatoes are cooking, whisk the eggs in a bowl until frothy. Pour the whisked eggs over the potato mixture when ready.
  5. Sprinkle grated cheddar cheese on top and gently stir until the eggs are just set but soft, around 3–4 minutes.
  6. Serve hot with extra cheese if desired.
