  • 1 cup granulated sugar (adjust based on cherry sweetness)
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup unsalted butter, melted
  • 1 cup whole milk (or almond/oat milk)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the pitted cherries with 1/2 cup sugar and let them rest for about 10 minutes.
  3. In another bowl, combine flour, baking powder, and remaining sugar. Stir in melted butter and milk until just combined; the batter should be thick yet pourable.
  4. Grease an 8-inch baking dish. Pour half of the batter into the dish and spread evenly. Layer the cherries on top, then dollop the remaining batter over them.
  5. Bake for 35-40 minutes until golden brown and bubbly around the edges.
