  • 2 cups cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh or canned)
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons olive oil
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook rice according to package instructions; set aside.
  2. Preheat a skillet over medium-high heat with olive oil. Season chicken with taco seasoning, salt, and pepper.
  3. Cook chicken for about 6–7 minutes on each side until fully cooked. Let rest before slicing.
