- 1 tablespoon grated ginger
- 1 can (14.5 oz) diced tomatoes
- 1 can (13.5 oz) coconut milk (optional)
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- Salt to taste
- Olive oil for sautéing
