  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can black beans, rinsed and drained
  • 2 cups low-sodium chicken broth
  • 1 cup frozen corn
  • Tortilla chips for topping
  • ½ cup sour cream for serving

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked, about 5 minutes.
  2. Add chopped onion and minced garlic; sauté until the onion is translucent, about 3 minutes.
