  • 8 corn tortillas
  • 2 cups enchilada sauce (homemade or store-bought)
  • 1.5 cups shredded Monterey Jack and Cheddar cheese blend
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Fresh cilantro (optional, for garnish)
  • Sour cream (optional, for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until golden brown (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in the ground beef, cumin, and chili powder; cook until browned. Drain excess fat if necessary.
  4. Spoon the beef mixture into each tortilla and roll tightly. Place seam-side down in a greased baking dish.
  5. Pour enchilada sauce over the rolled tortillas and top with shredded cheese.
  6. Bake uncovered for 20-25 minutes until bubbly and golden brown. Let cool slightly before serving; garnish with fresh cilantro if desired.
