Ingredients

  • 2 large eggs
  • 1 cup eggnog
  • 1/2 cup whole milk (or non-dairy substitute)
  • 2 tsp baking powder
  • 1/2 tsp nutmeg (freshly grated if possible)
  • 1/2 tsp cinnamon
  • 2 tbsp maple syrup or honey (for serving)

Instructions

  1. Gather all ingredients and measure them for easy mixing.
  2. In a large bowl, whisk together flour, baking powder, nutmeg, cinnamon, and a pinch of salt.
  3. In another bowl, beat eggs and stir in milk and eggnog until smooth.
  4. Combine wet ingredients with dry ingredients, stirring gently until just mixed (lumps are okay).
  5. Preheat a non-stick skillet over medium heat and lightly grease it with butter or oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top (about 2-3 minutes), then flip and cook until golden brown (another 1-2 minutes).
