  • 1 (15 oz) can low-sodium black beans, rinsed and drained
  • 1/2 cup plain breadcrumbs
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup onion, diced
  • 2 garlic cloves, minced
  • 1 tsp cumin powder
  • 1 tsp smoked paprika
  • 1 large egg (or 1 tbsp flaxseed meal mixed with 3 tbsp water for vegan)
  • Salt and pepper to taste
  • Olive oil for cooking
  • 4 burger buns
  • Toppings: lettuce, tomato, avocado

Instructions

  1. In a mixing bowl, mash the rinsed black beans until mostly smooth but still slightly chunky.
  2. Sauté the diced onion in olive oil over medium heat until translucent. Add minced garlic and sauté for another minute.
  3. Combine sautéed onion and garlic with mashed beans, breadcrumbs, cilantro, cumin, smoked paprika, egg (or flax mixture), salt, and pepper. Mix well.
  4. Form the mixture into four patties about ½ inch thick.
  5. Heat olive oil in a skillet over medium-high heat. Cook each patty for 4–5 minutes on each side until golden brown.
  6. Serve the burgers hot on buns topped with your favorite ingredients.
