- 1 (15 oz) can low-sodium black beans, rinsed and drained
- 1/2 cup plain breadcrumbs
- 1/4 cup fresh cilantro, chopped
- 1/4 cup onion, diced
- 2 garlic cloves, minced
- 1 tsp cumin powder
- 1 tsp smoked paprika
- 1 large egg (or 1 tbsp flaxseed meal mixed with 3 tbsp water for vegan)
- Salt and pepper to taste
- Olive oil for cooking
- 4 burger buns
- Toppings: lettuce, tomato, avocado
Instructions
- In a mixing bowl, mash the rinsed black beans until mostly smooth but still slightly chunky.
- Sauté the diced onion in olive oil over medium heat until translucent. Add minced garlic and sauté for another minute.
- Combine sautéed onion and garlic with mashed beans, breadcrumbs, cilantro, cumin, smoked paprika, egg (or flax mixture), salt, and pepper. Mix well.
- Form the mixture into four patties about ½ inch thick.
- Heat olive oil in a skillet over medium-high heat. Cook each patty for 4–5 minutes on each side until golden brown.
- Serve the burgers hot on buns topped with your favorite ingredients.
