  • 2 tbsp chipotle peppers in adobo sauce
  • ½ cup ranch dressing
  • 4 large flour tortillas
  • 1 cup lettuce, shredded
  • 1 cup tomatoes, diced
  • ½ cup onions, diced
  • ¼ cup cilantro, chopped
  • Juice of 1 lime
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix chipotle peppers, ranch dressing, and lime juice. Marinate chicken breasts for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes per side until cooked through (165°F internal temperature).
  3. In a skillet with olive oil over medium heat, sauté the onions and bell peppers until tender (about 5-7 minutes).
  4. Allow the chicken to cool slightly before slicing it into strips.
