- 1 lb ribeye or flank steak
- 1 cup cherry tomatoes
- 1 medium cucumber, diced
- 1 small red onion, thinly sliced
- 1 bell pepper (any color), sliced
- ½ cup crumbled feta cheese
- ¼ cup Kalamata olives, pitted and sliced
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- Fresh herbs (parsley or oregano), finely chopped
Instructions
- In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add steak and marinate for at least 30 minutes.
- Slice bell peppers, cherry tomatoes, cucumber, and red onion. Arrange on a baking sheet.
- Heat grill or skillet over medium-high heat. Sear steak for about 4-5 minutes per side until desired doneness. Let rest before slicing.
- Toss veggies in olive oil with salt and pepper. Roast in a preheated oven at 400°F (200°C) for 20-25 minutes until tender.
