  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1/2 cup quality balsamic vinegar
  • 1 tbsp honey
  • 1 cup bell peppers, sliced (any color)
  • 1 medium red onion, thinly sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken breasts with salt and pepper on both sides.
  2. 2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and cook for about 6 minutes per side until golden brown and internal temperature reaches 165°F.
  3. 3. Remove the chicken from the skillet and set aside. In the same skillet, add sliced red onion; sauté for about 3 minutes until translucent.
  4. 4. Add bell peppers and minced garlic; cook for an additional 5 minutes until peppers soften.
  5. 5. Pour in balsamic vinegar and honey; stir well and simmer for 2 minutes until slightly thickened.
  6. 6. Return chicken to the skillet, coating each piece with the sauce, then warm through for another minute.
  7. 7. Serve hot with your choice of sides.
