Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 12 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 minced garlic cloves
  • Salt and pepper to taste

Instructions

  1. Pat the chicken dry and generously coat both sides with Cajun seasoning.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for about 6 minutes per side until blackened and cooked through. Remove from skillet and let rest.
  3. Cook fettuccine in salted boiling water according to package instructions until al dente; drain.
  4. In another pan, sauté minced garlic in butter until fragrant, then add heavy cream and simmer gently.
  5. Stir in Parmesan cheese until melted. Combine with cooked fettuccine and sliced blackened chicken. Season with salt and pepper to taste.
  6. Serve hot, garnished with extra Parmesan and fresh parsley if desired.
